Bounty Targets are a series of Freemode Missions in GTA Online, given by Maude Eccles.
This job has been added to the game as part of the 1.44 After Hours update on August 3, 2018, and is available on PS4, Xbox One, PC, PS5 and Xbox Series X|S.
This is a Solo mode that can be played by each GTA Online player individually.
Maude reaches out to the player via email, providing a mugshot of the bounty target and marking their last known whereabouts on the map. The player needs to scour the designated area, guided by a metallic wind chime sound that intensifies when nearing the target, reminiscent of the Treasure Hunt mechanics.
Maude Eccles offers her work as a bounty hunter to the player through an unsolicited message - she mails the player a mugshot of a target and his approximate location; the player must take them out and return them for a cash reward.
Returning the target alive will award more money, as Maude does not want them dead. The most efficient method is to use a nightstick to knock the enemies out. Every live target awards $10,000, while every dead one, only $5,000.
There are a total of 5 targets to take out from a list of 20 possible targets. After completing all 5 targets, Maude will award the player a Stone Hatchet, which can then also be unlocked in Red Dead Redemption 2.

Stone Hatchet Kill Challenge
After the player obtains the Stone Hatchet, they will be informed that they must perform 25 melee kills using it for a big reward.
Killing an enemy with the hatchet will award the player a rampage boost, similar to Trevor's special ability.
Taking down 25 enemies with the hatchet rewards you with $250,000 and unlocks the Stone Hatchet weapon in Red Dead Redemption 2.
